Back to School Lunches

No matter what time of the year, those dreaded school lunches are always on our minds. We want to provide our kids with a well-balanced meal, but we also want them to enjoy their lunches. They need colour, variety and things that we just know that kids like to eat.  Back-to-school lunches don’t have to be difficult anymore.  Check out these 5 recipes below and they will soon become your child’s favourite lunches. Baked Mac & Cheese Bites

Every kid loves Mac & Cheese, so why not give them a twist on a this classic that they will want to eat for lunch—guaranteed!

Ingredients

2 cups uncooked macaroni noodles
1 pkg Mac & Cheese Seasoning (Pack of 3) 
1 egg
2 cups grated cheddar cheese
12 cup milk, your choice
2 tbsp unsalted butter

What child wouldn’t be excited to open their lunch to find their sandwich on a stick.  Create fun and exciting lunches that they just can not wait to dig into. With younger kids you might want to remove the stick and just place all the ingredients in a line in the container.  

Ingredients

14 cup cream cheese, softened
2 tsp CCB Dip Mix

4 slices bread 

12 English cucumber
2 oz (60 g) cheddar cheese
8 slices deli meat, your choice
1 cup cherry tomatoes

Cucumber Pinwheels

Pinwheels are not just for kids lunches, these delicious and easy to make pinwheels would be a great appy.  Just think of all the colour combinations that you can make using the different flavours of wraps on the market today.

Ingredients
12 brick (8 oz/250 g) cream cheese, softened
1 English cucumber
4 whole wheat 8″ tortillas

Ingredients
10 eggs
12 cup cheddar cheese

These Chicken Strips are the best ever.  I have had clients tell me that their kids prefer these over those popular restaurant ones.

Serve with 2 cups leafy greens, 1 tbsp favourite Epicure Dressing, and 12 cup cooked grains, your choice.

Ingredients
1 lb (450 g) chicken breast fillets, about 16 pieces
2 tbsp mayonnaise or 2% plain Greek yogurt
